Celebrating Cinco de Mayo:
Double Decker Taco Pizza

Have a child that isn’t too fond of Mexican food? This is a fun way to get them to try it during your study of Mexico and a Cinco de Mayo feast. The kids also get a big kick out of “building” their pizzas.

Ingredients:

flat corn tortillas
1 lb. Lean ground beef, chicken, or turkey
1 package taco seasoning
1 cup shredded cheddar or Monterey Jack cheese
1 can refried beans (or homemade)
shredded lettuce and tomato, as desired

Directions:

1. Prepare flat corn tortillas as directed on package. You could also try making your own if you want to be really authentic.

2. Brown your choice of ground meat over medium high in a nonstick skillet until thoroughly cooked. Absolutely no pink should remain.

3. Drain.

4. Stir in taco seasoning mix and any other ingredients called for on the seasoning packet directions. Reheat, following packet directions.

5. With warm corn tortillas on a cookie sheet, spoon some beans onto four of them; spread to edges.

6. Top each with a corn tortilla.

7. Top these with seasoned meat and sprinkle with cheese.

8. Place in oven and heat 8 to 10 minutes at 400 degrees Fahrenheit or until cheese is melted.

9. After removing from oven and placing on a plate, you may top the pizza with shredded lettuce and chopped tomato if desired.
