Celebrating Cinco de Mayo:
Scoop Tacos

Here’s a fun activity for the kids to make. This is yummy! What an addition to a Cinco de Mayo feast.

Ingredients:

1 package of 12 taco shells
1 pound of lean ground beef, chicken, turkey, or ground meat substitute
1 package taco seasoning (1.25 oz.)
3 cups of shredded lettuce
1 cup shredded cheddar cheese
1 medium tomato, diced
1 cup salsa (mild, medium, or hot … your choice)

Directions:

1. Heat the oven to 375 degrees Fahrenheit .

2. Break taco shells in half; arrange in single layer on ungreased cookie sheet. Bake at 375 degrees Fahrenheit for five to seven minutes.

3. Meanwhile, prepare ground beef, chicken, turkey or ground meat substitute with seasoning mix as directed on package.

4. Layer lettuce, seasoned ground meat/non-meat mixture, cheese, tomato, and salsa on large plate or platter. Serve with warm taco shell halves for scooping.

Yield: 6 servings.

Variation: instead of using seasoned ground meat/non-meat, you can substitute refried beans. [an error occurred while processing this directive]
