Celebrating St. Patrick’s Day:
Rainbow Cake
When many people think of St. Patrick’s Day they think of leprechauns. And, when they think of leprechauns, they think of rainbows. Here’s a fun activity to get the kids involved in. Throw in a fun scientific study of rainbows, and you’ve got a tasty treat with a sweet lesson thrown in.
Ingredients:
1 package (2 layer size) white cake mix
2 packages (4 serving size) any flavor gelatin dessert
2 cups boiling water
4 cups of thawed whipped topping
Directions:
1. Line bottoms and grease sides of two nine-inch cake pans.
2. Prepare and bake the cake mix as directed on package.
3. Cool in pans 15 minute; do not remove from pan.
4. Dissolve each package of gelatin dessert mix separately in one cup of boiling water.
5. Poke cakes with fork at half-inch intervals.
6. Drizzle one flavor gelatin over one cake.
7. Repeat with second cake layer and gelatin flavor.
8. Chill four hours.
9. Unmold one cake onto serving plate, cover with some of the whipped topping.
10. Unmold second cake onto first.
11. Frost top and sides with remaining whipped topping.
12. Sprinkle cake with desired garnishes or garnish with gumdrop flowers.
Directions for gumdrop flowers:
Flatten gumdrops with a rolling pin. Cut into flower petal shapes. Roll one to make a tight “bud.” Add 2 or more “petals” around the center to make a flower. Cut a green gum drop for a “stem” and “leaves".
