Fun Food: Peanut Butter Lick-Sticks

If your kids like peanut butter, and they also like ice cream, then they will love making this yummy treat. There is two variations to this, one with jelly and one with granola. Try both for a super neat treat!

Ingredients:

1 pint vanilla ice cream, softened
½ cup peanut butter (smooth or crunchy, your choice)
¼ cup granola OR 4 teaspoonfuls of your favorite jam
4 wooden Popsicle sticks

Directions:

1. In a mixing bowl, combine the softened vanilla ice cream and the creamy or crunchy peanut butter. Beat with a spoon or electric mixer on medium speed until well mixed. But don’t mix it so long that it becomes runny.

2. Pour half of the ice cream mixture into four seven-ounce paper cups.

3. Spoon one tablespoon of the granola OR one teaspoonful of your favorite jelly over the ice cream mixture in each of the cups.

4. Top with the remaining ice cream mixture, split evenly in each of the paper cups.

5. Cover each cup with aluminum foil. Make a small hole in the foil with a knife. Insert a wooden stick into the cup and into the ice cream mixture through the hole.

6. Freeze about four hours or until ice cream mixture is firm.

7. To serve, remove the aluminum foil and tear off the paper cup.

Yield: 4 servings.

Note: The variation with the granola tastes a bit like a peanut butter cookie, and the variation with jelly tastes more like a peanut butter and jelly sandwich.
