Home Ec Project: Apple Cinnamon Syrup
For this simple project you will be putting into practice the lessons you learned on proper hot water bath canning. Remember to follow all the direction for proper sterilization and food preparation.
You will need to also follow directions for using a candy thermometer to get the syrup to the correct temperature where it will thicken.
In addition to making a nice pancake and ice cream syrup, this makes a very pretty gift.
Apple Cinnamon Syrup
Ingredients:
6 c. apple juice
3 sticks cinnamon, broken
4 c. water
5 c. sugar
3 c. corn syrup
1/4 c. lemon juice
Directions:
Simmer the apple juice and cinnamon sticks for five minutes. Mix the sugar and the water and boil until it reaches 260 degrees F. Add the still warm apple juice and cinnamon sticks and corn syrup to sugar syrup. Boil five more minutes. Remove cinnamon sticks. Add lemon juice. Pour hot into hot jars, leaving quarter inch headspace. Adjust caps. Process 10 minutes in boiling water bath.
Yield: about 3 pints.
