Mexican Bean Soup Mix

This is another home ec project where you are creating your own convenience foods. This soup mix also makes a wonderful gift and/or part of a gift basket.

Ingredients:

1 pound black beans
1 pound red beans
1 pound great northern beans

Seasoning Mixture:

1 tablespoon dried parsley flakes
1/2 teaspoon crushed dried red pepper, scant
1 1/2 teaspoons chili powder
1/4 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon freshly ground black pepper


FOR THE SOUP

2 heaping cups Bean Soup Mix
1 pound bulk pork sausage
2 onions, quartered
2 cloves garlic, minced
16 ounces canned whole tomatoes
4 ounces chopped green chilies


Seasoning Mixture

Salt and freshly ground black pepper, to taste

Directions:

Combine the three beans. Place 2 heaping cups mix in a sealable plastic bag. Place plastic bag inside Gift Bag with a packet of seasoning Mixture and the recipe for Mexican Bean Soup.

Combine all seasoning mixture ingredients and place in a small resealable plastic bag. Makes one packet of seasoning mix.

To Make Soup:

Wash bean soup mix. Cover with water and soak overnight. In skillet, brown sausage, onion, and garlic. Drain beans. Add sausage mixture and the next three ingredients to beans. Add enough water to cover. Simmer 3 to 4 hours. Stir occasionally, adding more water as needed. Salt and pepper to taste.

Yield: 8 to 10 servings.
