Mallow Apples in the Coals
This is very tasty and a fun treat. It can be made in a fireplace at home, in a grill in the backyard, or in the fire ring at camp. You can also cook them in your oven. The smell when you open the foil on these is fantastic! Yum! Yum!
Ingredients:
6 tart red apples
6 vanilla caramels
24 miniature marshmallows
6 t. raisins
about 1 cup of vanilla pudding
Directions:
1. Wash and core six apples to within 1/2 inch of the bottoms. Carve out the tops slightly to make little wells about 1 1/2 inches across. Place each apple in the center of a 10 inch square of heavy-duty aluminum foil.
2. Fill each cavity with one caramel, 4 miniature marshmallows, and 1 teaspoons of raisins.
3. Bring the four points of each square of foil together at the top of each apple and twist to close securely. Place the foil packets directly on the hot coals of your fire with tongs.
4. Cook for about 20 minutes or until your apple is soft. Open the foil carefully, don’t get burned on the steam.
5. Serve warm with a spoonful of the vanilla pudding over each apple.
Note: To cook these in the oven, after you have sealed them in the aluminum foil, place them on a jelly roll pan in a 350 degree F oven for about 45 to 60 minutes. Test your apple for doneness by squeezing gently with tongs or use a hot pad to protect your hands and squeeze to see how soft the apple is.
