Fun Food: Banana Pancakes

Mmmmm! This is perfect for using those leftover bananas that are starting to go brown. This is also a good activity for teaching nutrition and ways of combining foods that aren't normally paired.

Ingredients:

2 medium ripe bananas
2 cups biscuit making mix (e.g., Bisquick)
1 egg
1 1/3 cups milk
2 T. sugar
honey or jelly

Directions:

1. Heat griddle over medium heat or heat electric griddle to 375 degrees F. Grease the hot griddle with shortening if necessary.

2. Mash enough of the two bananas in a small bowl to equal one cup.

3. Mix all ingredients together except mashed bananas. After you have the batter mixed thoroughly, then gently fold in the mashed bananas so that they are evenly spread through out the batter.

4. Cook as you would any other pancakes or follow the directions on the back of the biscuit making mix box.
