Celebrate Cinco de Mayo:
Guacamole y Salsa
Here's something fun to add to your Cinco de Mayo fiesta. Its a lovely dip with lots of color and flavor. Let the kids do the preparation and invite some friends over for a tasting party.
Guacamole
Ingredients:
2 large ripe avocados
juice of 1 lemon or lime
2-3 tablespoons salsa
dash of hot sauce
salt & pepper to taste
Cut the avocado lengthwise down to the seed and pull the two halves apart. Remove the seed. Scoop out the avocado meat. Mash with lemon juice. Add remaining ingredients, use right away.
Salsa Cruda
Ingredients:
4 tomatoes, diced
1 small yellow onion, diced
4 ounce can diced green chilies
3 cloves garlic, minced
1 bunch fresh cilantro, chopped
Combine all the ingredients, refrigerate until ready to use.
Serve with a variety of chips and toritillas.
