Fun Food: Banana Kiwi Pudding

This is a fun and different project to include in your studies. It could go with a unit on New Zealand or the tropics or jungles. Its nutritious and low in sugar as well.

Ingredients:

1 1/3 cups cooked rice
1 1/3 cups skim milk
1 teaspoon vanilla extract
2 tablespoons low-calorie sugar substitute
1 ripe banana
1/4 cup whipping cream, whipped
2 kiwi fruit, sliced, for garnish


Directions:

1. Cook rice and milk in 2-quart saucepan over medium heat until thick and creamy, 5 to 8 minutes, stirring frequently.

2. Remove from heat; cool. Stir in vanilla and sugar substitute. Just before serving, mash banana; fold banana and whipped cream into pudding. Garnish with kiwi fruit slices.
