Dutch Oven Texas Hash

Its time to gear up for Spring and for us that includes camping. We get into the great outdoors and let nature be our classroom. With all the fresh air and exercise, we are also reminded to feed our bodies as well as our brains.

Did you know that this can also be made in most household fireplaces?

This is a quick, simple, delicious main course! I have given just general information on ingredients. You can adjust amounts, etc. Play with it, and have fun!

Ingredients:

2 pounds lean ground beef
4 cups uncooked rice
1 large onion, chopped
1 bell pepper, seeded and chopped
1 jalapeno, seeded and chopped (optional)
2 small cans tomato sauce
Chili powder, to taste
Salt, to taste
Pepper, to taste

Instructions:

In a large Dutch oven, brown the hamburger meat, onion, bell pepper, and jalapeno pepper. Once the meat is completely brown, remove meat, and drain almost all of the grease. In the remaining grease, saute the rice until the grains are clear in appearance. When it reaches this point, add 1 can tomato sauce to the rice and saute a little more. Add the meat mixture, the remaining can of tomato sauce and enough water to equal 2 parts of liquid for each cup of rice. Bring to a boil, cover, and set Dutch oven to the side of your coals. Allow rice to steam, stirring occasionally to make sure it doesn't burn. When the rice is done, remove from the fire area, and serve with tortillas, biscuits, or corn bread.
