Sam-I-Am-Eggs

This is a really fun activity is you are doing literature studies or reading lessons using the Dr. Seuss books ... especially Green Eggs and Ham.

These are also super simple also!

First, hard boil as many eggs as you will need.

Next, cut them in half and take out the yellow yolks. Place the hard boiled egg whites on a plate. These will hold the "Green Eggs."

Mash the yolks with a fork. Add a bit of mayonnaise or salad dressing (e.g., Miracle Whip), some salt, and a few drops of green food coloring. Some folks also add a little sugar and vinegar to their deviled eggs recipe ... your choice whether to do this or not.

Mix everything up until you have a smooth filling. Spoon this filling into the egg white halves.

You can have a "Green Eggs and Ham" dinner or lunch and watch their faces light up!
