Little Miss Muffet
and her Curds and Whey

And frightened Miss Muffet away!

Ever wondered what curds and whey are? Ever tried to answer your kids about this question? Here’s a fun activity where you can both investigate what a curd is and what whey is.

Milk is approximately 88% water. The remain 12% is what is known as milk solids. Curds and whey result when vinegar is added to milk. The vinegar curdles the milk causing “curds.” The liquid that remains from the curd formation is called whey. I wouldn’t eat the curds and whey, but that is what is used in cheese making.

Below, after the directions for creating curds and whey, is a very simple recipe for turning them into healthy and homemade cottage cheese.

Curds and Whey:

Pour one quart of whole milk into a non-aluminum container. Add ˝ cup vinegar and stir. Let the mixture site for 2 or 3 minutes and you will have curds and whey.

Cottage Cheese:

Line a colander with cheesecloth. Pour your curds into the cheesecloth. Cover the curds with another piece of cheesecloth to keep dust and bugs out. Let it drain for 6 hours. Cut the resulting mass of cheese into smaller bite sized pieces and enjoy!
