Apple Pie Bars

Here's a perfect activity for the kids, especially now in the autumn of the year. These are yummy and for those with wheat allergies, I've been told that the wheat substitutes work well in this recipe.

Ingredients:

4 cups peeled tart cooking apples that have been sliced thinly
1 (6 oz.) can apple juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon cornstarch
1/2 cup sugar
3 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 cup butter, softened to room temperature
2 eggs, slightly beaten

Directions:

FOR FILLING:
In a large saucepan, combine apples, apple juice, cinnamon and nutmeg. Cook this mixture over medium high heat until boiling, stirring occasionally to keep from burning or sticking. Combine cornstarch and the 1/2 cup sugar. Stir this into the boiling mixture. Cook and stir until it is thickened and bubbly. Remove from heat and cool slightly.

FOR CRUST:
In a large mixer bowl stir together the flour, the 1 cup of sugar, the baking powder and 1/4 teaspoon salt. Add the butter and the two eggs. Beat on low speed until the mixture is blended and crumbly. Press 2/3 of the crumb mixture (3 1/2 cups) into a greased 15 x 10 x 1 inch pan. Spread apple mixture evenly over the crust. Sprinkle the remaining crumbs over the apples. Bake at 375 degrees F for 25 to 30 minutes or until it is golden brown. Cool, cut into bars.

Yield: Makes 48.
