Impossible Pumpkin Pie

This is such an easy recipe that even the little one can help. And, the kids love using the blender. Great results with very little effort and the recipe is almost always no-fail so long as you put the timer on the oven.

Ingredients:

3/4 c. sugar
1/2 c. Bisquick baking mix
2 tbsp. margarine
1 (13 oz.) can evaporated milk
2 eggs
1 can pumpkin pie spice
2 tsp. vanilla


Directions:

Preheat oven to 350 degrees. Grease pie plate 9 x 11 1/4 inch or 10 x 1 1/2 inch. Beat all ingredients until smooth, approximately 1 minute in blender. Pour into pan. Bake until you can insert a knife into the center and it comes out clean, approximately 50 to 55 minutes. Garnish with whipped cream, if desired.
