Fall Fun: Pumpkin Roll
This is a yummy and beautiful dessert. It makes a great home ec project. If your child isn't old enough to do everything themselves, at least let them to the measuring and mixing. The measuring is for math and science skills and the mixing builds muscles and coordination.
Ingredients:
3/4 c. Bisquick (or similar self-rising, baking mix)
1 c. sugar
1 c. chopped walnuts
1 tsp. pumpkin spice
3 eggs
2/3 canned packed pumpkin
2 tsp. cinnamon
1/2 tsp. nutmeg
Directions:
1. Grease jelly roll pan; line bottom with wax paper; grease paper.
2. Mix all ingredients and pour into pan.
3. Bake at 375 degrees for 15 minutes.
4. Invert roll onto clean towel dusted with powder sugar and walnuts.
5. Carefully peel off wax paper.
6. Roll up cake and towel together.
7. Place seam side down and cool completely.
--FILLING:--
1 c. powdered sugar
8 oz. cream cheese
6 tbsp. butter
1 tsp. vanilla
Beat filling ingredients together. When cake is cooled, unroll carefully. Spread with filling and re-roll. Place seam side down on serving plate.
