Pumpkin Spice Muffins
This is a great breakfast treat or dessert bread activity for the kids to get involved in. Lots of measuring and stirring for them to do and you can talk about why bread rises at the same time. You could also talk about where the different spices originated from.
Ingredients:
1/2 c. raisins
1 1/2 c. self-rising flour
1 c. sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
3/4 c. vegetable oil
1/2 c. canned solid pack pumpkin
2 lg. eggs
1/2 c. chopped pecans (about 2 oz.)
Directions:
1. Preheat oven to 350 degrees.
2. Grease 12 1/2 cup muffin cups.
3. Place raisins in small bowl. Pour enough boiling water over to cover. Let stand 5 minutes.
4. Drain raisins.
5. Mix flour, sugar, cinnamon and nutmeg in large bowl.
6. Add oil, pumpkin and eggs; mix just until combined.
7. Mix in raisins and chopped pecans.
8. Divide batter among prepared cups.
9. Bake until tester inserted in center of muffins comes out clean, about 25 minutes.
Cool slightly on rack. Serve warm or at room temperature.
