Fun Food: Chicken in a Can
Here's an unusual technique for outdoor cooking. What you wind up with is like an oven roasted whole chicken. All the fat will drain down and away from the chicken as it cooks, so you'll have a heart-healthy result.
Ingredients:
1 roasting chicken for every 4 people
1 (#10) can for every chicken
Directions:
1. Prepare hot charcoal fire.
2. Move coals from the center and put down a piece of heavy duty foil bigger than circumference of can.
3. Hammer a clean (strong) 8" stick into ground through the center of foil. Some people soak their stick in water prior to use as well.
4. Place chicken over stick with the stick going into the chicken cavity.
5. Place can so it completely covers chicken.
6. Push hot coals around base of can.
7. Place 2 or 3 of the coals on top of can.
8. Leave for approximately 1 to 1 1/2 hours.
Always check for meat "doneness" prior to eating. If the meat is still bloody or too pink next to the bone, continue cooking til done.
