Fall Fun: Pumpkin Soup

Here's a yummy and unique cooking project perfect for fall weather. The measuring, mixing, and heating are great exercises for the kids. The result is a healthy soup with a texture similar to tomato soup.

Ingredients:

2 1/2 c. mashed, cooked pumpkin
3 c. water
1 T. chopped onion
1 T. shortening
1 c. light cream or milk
salt and pepper to taste
1 T. curry powder


Directions:

1. Saute chopped onion until clear or transparent.

2. Combine pumpkin, water and onion. Boil for 3 minutes.

3. Add cream, salt, pepper and curry powder.

4. Heat over medium heat stirring constantly until thick.

Serves 16.
