Fall Fun: Pumpkin Muffins
Here is a wonderful project for the kids with lots of measuring and mixing. The results are a tasty and healthy treat that can be eaten at or with any meal.
Ingredients and Directions:
In a large bowl, add and combine well:
-- 1 egg
-- 2/3 cup brown sugar
-- 1/3 cup butter or margarine
-- 3/4 cup milk
-- 3/4 cup canned pumpkin
-- 1/2 cup raisins
In a smaller bowl, combine well:
-- 2 cup all-purpose flour, unsifted
-- 2 tsp baking powder
-- 1/2 tsp baking soda
-- 1/2 tsp salt
-- 1/2 tsp cinnamon
-- 1/2 tsp nutmeg
-- 1/4 tsp ground ginger
1. Combine wet and dry mixtures and fold together gently until just mixed.
2. Spoon into prepared pan. Bake at (400 F) for 20 to 25 minutes.
3. Remove from pan and cool on rack.
Yield: 12 medium-sized muffins.
