Incorporating Cooking:
Thai Limeade (Thailand)

This recipe produces a concentrate which is poured over a generous serving of ice. Oil from the lime skins provides the flavor of this drink.

Ingredients:

6 fresh limes
1/2 cup granulated sugar
2 1/2 cups boiling water
1/2 teaspoon salt
12 ice cubes


Directions:

1. Roll limes on a cutting board using hard pressure with your hand to loosen flesh and release juice easily.

2. Cut limes in half and squeeze juice, minus seeds and pith, into a jug. Reserve rinds.

3. Place rinds in another jug and cover with sugar.

4. Pour in boiling water and allow to steep five to 10 minutes depending on your taste. Five minutes will be intensely limy; 10 will have a hint of bitterness.

5. Add salt and stir thoroughly.

6. Strain warm liquid into juice.

7. Add ice cubes and refrigerate.

8. Serve over at least four additional ice cubes.
