Incorporating Cooking: Persimmon Pudding
Ingredients:
1 cup granulated sugar
1 cup persimmon pulp, mashed
1 egg
4 Tablespoons melted butter
1 teaspoon vanilla
1/4 cup sherry
1 cup flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup chopped walnuts
Directions:
1. Preheat oven to 350 degree F.
2. Place first six ingredients in a bowl and blend.
3. Sift dry ingredients together and add, a little at a time, to the wet mixture.
4. Add the walnuts and stir to incorporate.
5. Pour batter into a greased, 8 x 8-inch or 8 x 10-inch baking pan.
6. Bake for 40 to 45 minutes, or until toothpick comes out clean.
This "pudding" is really more like a persimmon brownie. It's great as is, with whipped cream.
