Incorporating Cooking: Easy Empanadas (Spain)
These are super easy empanadas, but you can also make them with meat filling, veggie paste, and other fruit filling. If you are familiar with "fried pies" or "pasties" then you are familiar with what an emapanada is.
Ingredients:
2 sticks (1/2 lb.) butter
1 (8 oz.) pkg. cream cheese
2 c. flour
Jam
Directions:
1. Cream butter and cream cheese.
2. Add flour and beat well. Chill overnight.
3. Roll out (1/3 at a time) fairly thin.
4. Cut into circles about 2 1/2 to 3 inches across.
5. Put a dab of jam in each circle, fold in half and seal edges with a fork.
6. Prick tops and bake in 350 degree oven for 15 to 18 minutes.
7. Roll in powdered sugar after slightly cooled.
8. Roll in sugar again after completely cooled.
