Lemon Pie Ice Cream
In honor of July being National Ice Cream Month, today's flavor is "Lemon Pie Ice Cream". This is yummy!!
Ingredients:
2 c. sugar
1 c. water
¾ c. lemon juice
2 c. half-and-half
2 egg yolks
Directions:
1. Boil the sugar and water together for about five minutes, stirring constnatly to make a thick syrup.
2. Add lemon juice to hot sugar syrup and set aside.
3. Mix one cup of the half-and-half with the egg yolks and cook very slowly, just below a boil, stirring, until you have created a thick, lumpy mess sometimes called custard.
4. This takes about 20 minutes of watching and stirring. Don’t get impatient or you’ll spoil it by allowing it to boil.
5. Cool the custard mixture.
6. If you prefer a tarter taste, reduce sugar to 1½ cups. If you prefer more of a custard taste, use three egg yolks.
7. Now combine the lemon syrup with the custard mixture and the remaining cup of half-and-half. Stirring will break up the lumps.
8. Chill, crank, and freeze.
