Apricot Ice Cream

In honor of July being National Ice Cream Month, today's flavor is "Apricot Ice Cream".

Ingredients:

2 c. fresh apricots
1½ c. sugar
1 pint half-and-half

Directions:

1. Pit the apricots and cut them into small pieces.

2. Then cook them with the sugar for about 10 minutes over medium heat.

3. Stir to prevent scorching.

4. Remove from heat and stir in half-and-half.

5. Cool, chill, crank and freeze.

Yield: one quart.
