Holiday Cooking:
Blueberry Gingerbread

Add something unique to this year's holiday feast. Let the kids have a party and serve this fun dessert with homemade whipped topping or warmed honey.

Ingredients:

½ cup shortening
1 cup sugar
1 egg, beaten
1 teaspooon soda
1 cup buttermilk
2 cups flour
½ teaspoon ginger
1 teaspoon cinnamon
½ teaspoon salt
3 Tablespoons molasses
1 cup fresh or frozen blueberries*

Directions:

Combine shortening, sugar, and egg. Dissolve soda in buttermilk. Add dry ingredients to creamed mixture, mixing well after each addition. Fold in molasses and berries. Pour into 8\" square pan. Bake at 350F for 30 to 35 minutes.

*If using frozen blueberries, thaw and lightly pat with paper towel to remove any excess water. You can also used dried, rehydrated blueberries.
