Indian Bean Bread
Native Americans made significant contributions to the lives of the colonists and pioneers of America. Without their help, many colonists would not have survived their first winters in the New World. Many of their contributions are still part of our lives today.
One of the areas that they contributed to the survival of the colonists and pioneers is in the area of food. They taught how native foods could replace the Europeans foods that would not grow like "back home."
Here is a modernized version of a recipe to use with a study on Native Americans and/or early American cooking.
Indian Bean Bread
4 cups cornmeal
2 cups cooked, colored beans*
½ teaspoon soda
2 cups boiling water
Put cornmeal into bowl, mix in beans that have been drained. Hollow out in meal a place to put soda and water. Make a dough stiff enough to form balls. Drop ball into a pot of boiling water. Cook about 45 minutes or until done. Serve with cooked greens and pork.
*By colored beans, I mean like a kidney bean or a black-eye pea ... you could even use English peas but they won't give you quite the consistency of a cooked dried bean.
