Fun Food: Pineapple Yam Pie
This pie is also called "postre de camote y piņa. Its a lovely holiday pie, or use it in a geography lesson of Spanish countries.
Ingredients:
2 yams
1/2 pineapple
3 cups of sugar
3 tablespoons of sweet sherry (optional)
Lady Finger cookies
nuts (for garnish)
Directions:
1. Cook the yams in a little water. Liquify them with the pineapple.
2. Dissolve the sugar in a cup of water and boil until it forms a light syrup. Remove from heat.
3. Take out 1/2 cup of the liquid, add the sherry and mix.
4. Add the yams to the remaining liquid. Boil until the liquid is thick enough that you can see the bottom of the pot, stirring constantly.
5. In a pie dish, layer the cookies (soaked in the sherry mixture) followed by the yams/pineapple mixture.
6. The final layer should be fruit of your choice ... usually pineapple. Chill before serving.
